Last week I put out call for favorite cocktail recipes so I wouldn’t have to toil over the Fourth of July weekend. And thanks to all our Gentle Readers, Food Friday is out kicking up her heels this weekend. (I have just prepared a Mile High Pie for next week’s column, though. So don’t think I am just lying in the hammock, reading books, daydreaming and enjoying the summer breezes…) Hope you all had a fantastic Fourth of July, too!

Ken’s Bluegrass Campsite Mimosas
As concocted at the Grey Fox Bluegrass Festival in Oak Hill, NY
1 bottle Korbel River Russian pseudo Champagne (tasty at $16 a bottle or so, as there is no reason to use real Champagne)
Orange juice (of any persuasion- we used frozen concentrate that had sat for a week in a cooler, thus the packaging was a tad soft and the contents fluid)
Grand Marnier
Prep: Pull bottles out from under the passenger seat of the car, where they’ve reposed quietly for a week and bury them in ice for a couple hours before show time.
In a clear plastic cup, or other container, depending on venue, pour a couple fingers of OJ. Add four fingers of bubbly, enough to create pulpy bubbles on the surface. Top with splashes of Grand Marnier. Drink immediately and repeat. Car camping at its most decadent. Be sure you diligently scout the surface of the drink before quaffing, as there were many dull, aged June bugs still airborne.

Susie’s Sazerac Saratoga
This is only consumed while on the porch after the races in Saratoga.
1 cube sugar
1.5 ounce Sazerac Rye Whiskey
.25 ounce Green Chartreuse
3 dashes Peychaud’s bitters
Lemon peel
Pack one old fashioned glass with ice. In second old fashioned glass, muddle sugar cube with the 3 dashes Peychaud’s bitters. Add Rye whiskey. Empty ice. Pour Green Chartreuse into chilled glass, swirl to coat sides. Discard excess. Pour Rye, sugar and bitters mixture into chilled glass. Garnish with lemon peel. Kick your feet up on the porch rail and discuss how much you made/or lost at the races today. It is a nice way to unwind while thinking about what is for dinner.

Pimm’s Cup
Mix 1 part Pimm’s No. 1 with three parts lemonade (or 7-Up). Add pieces of fresh orange, mint, cucumber, strawberries, apples, lemon and lots of ice. Best if made in a pitcher, serve in a highball glass. With small bowls of tasty nibbles.
