Here are a few turkey combo suggestions for those of you fortunate to have leftovers from Thanksgiving dinner. (Much the best part of the holiday feasting in this Spy’s humble opinion.)
We served these in wraps, flavored or otherwise, at Andy’s, but you could use any good bread – plenty of choices at the farmer’s market on Saturday. To heat, place ingredients on wrap and nuke for about a minute, then roll.
Bacon is almost always a welcome addition, except for the vegetarians, who will be happy if you leave out the turkey.
- Turkey, Brie, Apple and Arugula/Mesclun/Baby Greens, (add greens until after nuking)
- Turkey, Avocado, Arugula, Basil Pesto, (or tomato salsa)
- Turkey, Portabella Mushroom, Fontina Cheese, Spinach & Sundried Tomato or Roasted Red Pepper Mayo
(you’ll need to cook the mushroom first)
